Mie Goreng & Fried Noddle

Bali: ¡we cook it and we eat it! (Cooking class)

The island of Bali, so special of good food. Bali is sweet and spicy, it's coconut milk, it's sambal, it's banana leaves, spices, the most aromatic herbs, it's peanut sauce and it's palm sugar

The ingredients
  • 1 tablespoon + 1 teaspoon of sweet soy sauce "kecap manis"
  • 1 ½ tablespoon of soy sauce
  • ½ tablespoon of coconut oil
  • 5 cloves of garlic, chopped
  • 1 heads of shallots, chopped
  • Chiles, chopped, to taste, optional.
  • 1 cup carrots julienne
  • 1 cup of cabbage, chopped
  • 2 cups of dark and strong vegetables, cut into strips
  • 450g (1lb) cooked egg noodles
  • Green onion, chopped
  • 2 tomatoes, wedges
How to make Mie Goreng?
  • Combine all the ingredients of the sauce in a small bowl and stir to mix
  • Add a little more oil in the wok as necessary, light the fire to medium low and add the garlic, shallots and chilies. Sauté until the shallots are translucent
  • Add all the vegetables except the tomatoes, turn the heat to medium high, add a little splash of the sauce, then mix until it withers, about 1-2 minutes
  • Turn the heat to high, add the noodles, the protein and all the remaining sauce, then continue tossing until all the sauce is well mixed and absorbed
  • Turn off the heat and mix the tomatoes and most green onions. Mix briefly just to heat the tomatoes and mix everything
